July 16, the dilemma fondant MM

by Marica
(Croatia)

Dear Michelle
in many sites on the internet and yours I also read that it should not be refrigerated cake covered with fondant MM.Pero on the other side must be refrigerated cake filled and frosted with cream cheese morello cherry.
My question is, how do I do with a cake filled and frosted with cream cheese and covered with fondant icing MM?
FYI for the next 2 months in my area of temperature is approximately 87, 30 C (F).
Thanks in advance and best wishes,
Marica

From the editor:

Hello Marica,

Ideally, not refrigerate a fondant covered cake but with temperatures that this high, you really need cooling for cream cheese filling.

The danger is that condensation may form on the surface of the fondant when removing the refrigerator cake.

Here are some tips that should help:

1. Place the cake in a carton in the frigorífico.Esto help absorb any moisture that is present.

2. When remove the cake to come to room temperature to serve, place a low near cake speed fan to help dry out the fondant and prevent the spots of condensation forming.

3. If you have access to a dehumidifier, have it running in your kitchen when you exit the cake in the refrigerator.

Good luck.

July 27, time for large, dense cake Baking

by Paula
(Lancaster, CA)

We want to make a cake 3 level for the reception of my daughters week viene.La recipe that we would like to use is a dense, pastel yellow which is great as a sheet cake or 8 "but is touchy even when increased to 9", but is not a problem. how we determine baking time and temp.changes if we want to make a 12 "round"?

From the editor:

Hey Paula,

To change the sizes of bread, the oven temperature is still the mismo.Ajustar only the cooking time.

I would recommend to bake the cake in two pans (2/3 batter in one and the other 1/3) .Esto decreases the required cooking time and helps keep the cake wet. check cakes to see if they finished in 30 minutes and every 5-10 minutes thereafter. Also, just divide the greater of the two layers to give three, layers equals for filling.

Good luck.

This Cake of Dump Truck was my first cake and wanted that be special for my nephew who was passing one!

Each element of this cake is 100% comestible.Se took a day and a half to do.

Cake and frosting are from scratch. The basis is a marble with spongy escarcha.El 1/4 sheet cake truck was made of the same pie baked in a bread pan and then, marble carved in the shape of the truck and coated in spongy.

Tires are chocolate mini donuts and the bed of the truck is made of Hershey chocolate covered cherry bars and "glued" together with chocolate.La bed was raised through the use of the cocoa which can be purchased in the shop which cross at chocolate cereal straws.

"Dirt" is chocolate spongy icing sprinkled with crushed Oreo cookies to make it look as real dirt.I have used almond crust to sculpt a plaque with your name to further customize.

I also did a mini cake identical smash great cake for my sobrino.Amaba this cake and also did all the guests.

1 Be sure to cool the cake completely before filling and capping.Coat of arms of Crumb cake after filling and keep in the refrigerator for the noche.Esto will prevent that settle on the cake, which can cause cracks or descent in the spongy.

August 2, how do I get a moist chocolate cake?

by Marcia
(Netherlands Antilles)

My chocolate cake comes to dry especially in part higher. How can I get a moist chocolate cake?

From the editor:

Hey Marcia,

Not to mention what recipe is using what I cannot tell if anything has to do with it, but here is some suggestions that may help:

1 Check the temperature of the oven with a thermometer oven, available in most ferreterías.Muchos household ovens can be off so as 50 degrees (F), which means that your cake bake much faster as esperado.Esto can cause the cake to lose everything of moisture.

2 Bake the cake in two pans for uno.Esto allows you to bake for less time which retains more moisture in the cake.Pour 2/3 of the batter cake in a frying pan and 1/3 on the other.Bake, cool and divides the thickest layer two and now has three equal layers.

Good luck.

I I refrigerate or freeze the cake before decoration?

Hello

Some people like to freeze cakes before decoration, but can adversely affect the texture and taste of the cake.

Here are my top tips for a beautiful decorated cake:

1 Baking cake two days before it will serve.

2. After of baking and cooling cake completely, refrigerate for an hour, divided into layers (tort) padding between the layers.

3 Adding a coat of Crumb and keep in the refrigerator overnight.

The choice of fondant or spongy is completely filtered.phishing choice will depend on if the taste is more important than appearance.

If taste is more important, to go with a real spongy, as spongy meringue suizo.Se can extract the recipe in the edition of June 2010 newsletter "Too nice A sector".You can still use all the accents, as jobs and strings, fondant even if you decide to use spongy.

If you are looking for is more important, go fondant.

Jul 15, Marshmellow Fondant... storage?

(Armed forces Europe)

Hello, I did the MMF using your recipe, I realized that he had answered someone if they want to store it in the refrigerator, is this necessary?

Seems to be nothing in it that need refrigeration, but I want to be sure, another similar recipe says wrap it in plastic wrap and store in a container of hermetic, that I did, but I am worried if I put it in the fridge that become too hard when I need it in a week will?

Also, if you want to attach points spot made for MMF to the MMF cake covering, what is the best way to do this? do I have a tube "Write gel" which is evident in a cake shop I got a few years ago which would operate as a glue?

Thanks in advance for your help!

Kathy

From the editor:

Hello Kathy,

You can store the Marshmallow fondant embroiled in the refrigerator or at room temperature cool. Will keep longer in the refrigerator and there is no worry that it is to the rígida.Usted only microwave high for 10 seconds and is ready to go!

To attach points, or any other fondant decor, I recommend very lightly brushed back decoration with clear of alcohol, such as vodka or gin.Se evaporates quickly, avoiding any rupture of the fondant.

I just found your site and LOOOOOOVE is. I am a newbie when it comes to this (just made my first covered last week - fondant cake was really cute!) so I have three questions for you.

First, I made Marshmallow fondant and worked very well for me, and proven gran.Pero I am interested in using black fondant as well.I read here that you should use fondant chocolate. How do?

Secondly, where get their cake plates? Are separate circles below of cakes in turntable cake?

Thirdly, what else do you use fondant for addition of cakes coverage? saw me the demo bow, but there are other uses? what can harden? on the cake that I'm doing now, I want a stand up "G" and wasn't sure if it would be better to make it out of a color or fondant chocolate.?

Thanks in advance for everything what they are doing! This has been such a blessing!

From the editor:

Hi Sarah,

I am very happy that you are enjoying the sitio.Responder your questions:

1. To make fondant chocolate, substitute 1 cup powdered sugar with cocoa polvo.Aparte, follow the recipe as escrito.Esto allows you to use only a small amount of dye food black gel to make black fondant, it does not mean that you bitter after of taste much color food.

2 In general I do my cake plates by reciclaje.Tres four circles or rectangles cut to the desired size, together tape boxes and cover with cloth and clear paper contact, fondant, or any other kind of coating that you like.

3 You can use fondant filling cakes, make tape to be used as boundaries, trim decorations or any type of flower that can be imaginar.También can knead a little Tylose, powder to make rubber paste which dries and hardens, making it useful for decorations such as stand up letters you mention.Fondant or rubber paste can also be used for making quilted cake figures (people, animals, etc.).

Well is cover fondant white cake?

From the editor:

It can cover almost any kind of cakes with fondant, including white cake.

The only type of cake that I do not recommend covered with fondant is Angel Food Cake, because it is the structure does not hold under the weight of the fondant.

If you plan to make a white cake multi-tier, be sure to add cake circles and spikes between each level, to support the structure and the weight of the fondant.

July 22, how much batter cake and filling ¿do?

by kelli bartlett
(kingsland, ga)

I have a 14 in., 10, 6 3 inches deep and I would fill between layers with the cream cheese icing, and then cover with spongy. how much cream cheese filling is needed?

How many cups batter to make 14,10 and 6-inch, 3 inch depth?

From the editor:

Hey Kelli,

The amounts listed below are fill a cake of three layers:

"8 cups for 14 cake"
"5 cups for the cake 10"
"1 1/2 cups for 6 cake"
Total of 14 1/2 cups filling.

When baking cakes, baked always something bigger than a cake 8 "two pans, with 1/3 of the batter come into a pan and 2/3 of the batter in the other."This prevents that during cooking and maintains dry cakes. This also means that I only have to cut a cake to finish three layered iguales.Por therefore amounts that I am quoting to you are for this method of cooking:

3 cups batter for a 6 "(baked in a pan)"
9 cups batter for a 10 "(tazas_de_3_1/2/5_1/2_tazas)"
batter 11 cups for a 14 "(7 cups/4 cups)"

Good luck.

Aug 9, Birthday Chocolate Cake

Texas (Germany)

layers of spongy chocolate fudge/Orange

chocolate dream cake chocolate fudge/orange buttercream layers

My friend loves chocolate, so I had to try this chocolate birthday cake.

She will have a birthday soon party and wanted to be preparado.Y will cook for birthday party because I am sure you will love so much as I and my children.

The recipe for this cake of chocolate & filling, I tried this page - best ever chocolate cake.

Full between layers with two variants of this basic recipe spongy - Orange spongy Dream at the top and Chocolate Fudge spongy part inferior.Por it all came from scratch. :-)

I have prepared the cake, as explained on this page except for the part baking.I baked the batter in 3 single round pans instead of 2.I didn't want to cut another one in half because, for me its too messy (as it is breaking it or cut unequal) .Todas 3 layers were uniformly oven for 30 minutes in a preheated oven 350F.Yo cooled them before putting the spongy en

While a layer was still in the oven (I had only 1 round bread cake), I put spongy the first layer and put right in the fridge to keep your spongy stiffness. The is getting really mild climate cálido.También, I left the cocción-inferior (from the pastel-pan) than the layer.I 2nd and 3rd was easier to flip it that way and press it more evenly, without breaking it.

So after full and frosted cake, I took a small spoon and crossing up and down the cake have a look. Its skewers the way faster and easier to make it seem cute without hours of work.

I put little bits of chocolate and a dye on top, así.Creo that however you like, that is how you decorate.Just to your taste and needs.

So all that this was done I put it in the refrigerator overnight.

Was the best filling/icing made for a cake... I had a clean appearance of cut the cake.It held its shape and savour maravilloso.* still should make sure not to put it out on a hot day, because spongy execution *

To prepare the entire cake including cooking and decorating I would say it took me about 2 1/2 hours + the cooling after (at night)!

Now I've been baking from about 15years.No professional. only for friends and family and for me, by supuesto.Yo am German and American cooking is still new to me.
But I am always eager to prove things nuevas.Las recipes Easy-cake-ideas I found to be really delicious just by reading them, so I had that final probarlo.Al I was rewarded with a wet birthday cake delicious chocolate.

August 2, how to travel 2 hours with a decorated cake?

Us two hours we are traveling to our children's b-day party and I'm not sure how best to keep it fusion, any suggestion. Thank you.
Donna

From the editor:

Hey Donna,

Short of having cake to travel on a portable fridge, here are some things you can do:

1 Chilled cake at night so you all have a chance to firm up.

2. Add additional support if it is a cake in niveles.Utilice spikes of 7-9 cake by level and a long pin in the Centre, have negotiated on the dashboard of cake, to avoid any slippage in warm climates.

3. For travel, place the cake in a reversal of a bathtub plastic storage quart 58 (55 litres).Place the cake on the cover, with a piece of rubber under pastel plate and the adjustment of the tub shelf lining instead.Wrap the tub with towels to insulate and crank place out of direct sunlight direct, if possible.

Good luck.
